This programme focuses on delivering the core skills required for anyone wanting to make a career for themselves in the business of delivering services, products and visitor experiences to ‘The Customer’. Entry Criteria
- Applicants for whom English is a second language must meet IELTS (or equivalent) Level 5 or above.
- Minimum of three years at secondary school or completion of NCEA Level 1 or National Certificate in Tourism and Travel (Level 2) or National Certificate in Hospitality (Entry Skills) (Level 2) or equivalent.

The Diploma in Ecotourism takes further the topics covered in the certificate programme. It is offered using distance learning modules so you can go for the whole qualification or just what you are interested in. You can do nearly all the Diploma from your base, wherever it is.
This programme is designed for people who want to enhance their employment options within the ecotourism industry. Graduates will gain specific skill sets that will enhance their employment opportunities within this industry.
Delivered in short awards, predominately using distance learning methods with some block courses necessary to complete the diploma. It is ideal if you are already employed and wish to complete some study while working.

Course Structure
We deliver you 3 compulsory Modules including: Guiding, Ecosystems and Culture in Tourism which make up 60 credits.
You must then complete another module from a choice of two, either Business Skills or a Sustainability paper. (20 credits).
To complete the Diploma in Ecotourism, you have a choice of a number of electives which you can combine to finish the qualification. These are: Legislation in Ecotourism, Marine Mammals and Research (40 credits).
The total qualification is 120 credits.
You have the option to complete any of the 20 credit Short Awards or electives on their own in areas that interest you.
There are also papers from the National Diploma in Business which help students move into better positions in Ecotourism businesses as their understanding grows.
The diploma is particularly relevant for people already working in ecotourism looking to up-skill, or those wanting to add value to their existing business.

- Applicants for whom English is a second language must meet IELTS (or equivalent) Level 6.0.
Selection Criteria apply. Special Entry may be granted where evidence exists that the applicant can successfully complete the diploma programme. This may include demonstrating an understanding of NZ Biology, Ecology and Earth Sciences to Level 4 of the National Qualifications Framework. Please contact the Polytechnic for details.

Certificate in Professional Culinary Arts Level 3

This full time programme consists of theory, practical and restaurant service classes.
Tai Poutini Polytechnic operates its own training restaurant, Tutoro, which is staffed by the students and is renowned for its excellence in food and service. As well as gaining experience in Tutoro, you will also be required to complete a two week, work based training module in the industry.
Upon successful completion of the programme you will receive the Tai Poutini Polytechnic Certificate in Culinary Arts and gain entry to the assessment for international qualification - London City and Guilds Certificate in Food Preparation and Cooking.
Our facilities
Our training kitchen is well equipped to meet your training needs. The modular design on which our facility is based provides moveable work stations and allows it to be used not only as a practical classroom, but also as a production kitchen for our restaurant Tutoro.
Class sizes on the Professional Culinary Arts programmes are much smaller than in larger polytechnics, which means that you will enjoy lots of individual tuition from tutors. This is a real plus when studying, as the extra attention that you get from your tutors can be of enormous benefit.

This programme will provide students with the opportunity to enrol in the Tai Poutini Polytechnic Advanced Certificate in Professional Culinary Arts and the London City and Guilds Diploma in Food Preparation and Cookery.

Applicants must meet the following criteria:
- Applicants will have a minimum of eight Level 2 credits in each of English and mathematics (or equivalent);
- Applicants for whom English is a second language must meet IELTS (or equivalent) Level 5.5 or above.
Special Notes:
Special entry may be granted where evidence exists that the applicant can successfully complete the programme. This process may include a written assessment based on numeracy and literacy comprehension.
- Student enrolment numbers will be dictated by the number of work stations available within the training kitchen environment.
- Where student numbers exceed the number of work stations available in the training kitchen facility, students will be waitlisted for entry.
- All applicants will be interviewed as part of the application process.
